Fire Roasted Chili

What did you have for dinner last night?  I had some great tasting Chili!
This recipe is very good and filling, the secret to the flavor I believe is the fire roasted tomatoes.  You can use any meat, I have use shredded chicken and shrimp would be good too.

Fire Roasted Chili
(1 Serving)
3.5 ounces Grass Fed, Organic Sirloin- cubed or ground (Can use any meat you desire)
1 C Muir Glen Fire Roasted tomatoes
1/2 C Pacific Low Sodium chicken broth
1 green onion- sliced
2 cloves garlic- minced
1/4 tsp Chili Powder
1/4 tsp Cumin
1/2 tsp Onion powder
1/4 tsp Oregano
1/4 tsp Basil
1/4 tsp Black Pepper
1/8 tsp Cayenne- to taste
Red Pepper Flakes to taste
Green Onion and Cilantro for topping

Brown your meat of choice on medium heat.  Add minced garlic and white part of green onion and reserve green part for topping.  Saute 1-2 minutes.  Stir in rest of spices, tomatoes and chicken broth.  Bring to boil then reduce heat to low and simmer uncovered for 1 hour.  It will cook down a bit; if you desire more liquid, you can always add a bit more broth. Top with green part of the green onion and cilantro.

Now to make a whole pound of ground sirloin at a time follow this...

Fire Roasted Chili
(5 servings)
1 pound Grass Fed, Organic Sirloin- cubed or ground
2- 14.5 oz cans Muir Glen Fire Roasted tomatoes
2 C Pacific Low Sodium chicken broth
5 green onions- sliced
4-6 cloves garlic- minced
1 tsp Chili Powder
1 tsp Cumin
2 tsp Onion powder
1 tsp Oregano
1 tsp Basil
1 tsp Black Pepper
1/4 tsp Cayenne- to taste
Red Pepper Flakes to taste
Green Onion and Cilantro for topping

Brown your meat of choice on medium heat. Add minced garlic and white part of green onion and reserve green part for topping. Saute 1-2 minutes. Stir in rest of spices, tomatoes and chicken broth. Bring to boil then reduce heat to low and simmer uncovered for 1 hour. It will cook down a bit; if you desire more liquid, you can always add a bit more broth.  Top with green part of the green onions and cilantro.  This will be able to be measured out to 1 1/4 to 1 1/2 C serving depending on much it cooked down.

I hope you enjoy this recipe as much as I did.  If you want to feed your family the same meal, maybe serve over rice or stir in some beans after you remove your portion.  So after reading this...what are you having for dinner tonight?

  1. I would like to know is this recipe o.k. for P2 ? Would you count the tomatoes in this as your vegetable, and the meat is the protein ? So you would still need your fruit and grissini, correct ?

  2. Yes, everything I post here will be Phase 2, Pounds and Inches Protocol. You will still eat fruit and melba/ grissini.

  3. Hi Natasha, I made your chile tonight and it was really great. My little girls kept saying how good it smelled but I just made it for me and knew it was too spicy for them. I guess that means that I will be making two batches in a few days, one for me and one for them without the cayenne and red pepper flakes. I also made the cucumber salad but too pack of stevia saw too much for me. Maybe it was that I used rice vinegar which is mild compared to some others. I will have to make it again and see. Thank you!

  5. Thanks! My kids like it too but eat spicy just fine (even more than me)...you could always pull yours or there's out first too if you just want to make one batch or short on time.

  6. Art Teacher- Yes, green onion are an herb and are considered a spice in P2. You can use green onions, cilanto, basil, parsley all the same. Top on salads adds flavor too. Hope that helps.

  8. H Melissa, I'm so glad yo liekd it! I buy the Muir Glen Fire Roasted Tomatoes in a can. Find it right by your canned tomatoes at Target, Walmart or natural food store too. It is still good either way but the roasted adds another depth of flavor. Hope you find them!

  10. the muir glen tomatoes i found in my grocery store has sugar listed as 4 grms. Do the ones you have listed above not have sugar?

  11. Hi Marva- Yes all tomatoes are going to show sugar grams in the Nutritional Info, as long as there is no added sugars down in the listed ingredients you are good. Tomatoes have narural sugars just like in fruits, veggies have them too just lower amounts. Hope that helps, enjoy!

  13. Oh my did I just cheat?? That fire roasted chili was delicious. I am on round 2 day 18 and this is the first time to have beef. It was sooo wonderful. I was getting tired of boiled chicken and shrimp. Thank you so much for the recipe. Oh and by the way I know it wasn't a cheat, but it sure tasted like it. My daughter tasted it and loved it too so I will make it for them next time. I will be trying your other recipes too. Thanks again, Cindy

  14. I made 4 servings today and I loved it! Do you happen to know how many calories it has? I used 96/4 lean ground steak, and then everything else listed in the recipe. I am using the "lose it" app on my iphone to track my calories :)

    thanks!

  15. Thanks Dara! You would put it in individual into your calorie counter- 3.5 oz of 96/4 lean ground sirloin, 1 C canned tomato, 1/2 C broth and that will give you a total calorie count. It depends on the meat, tomatoes amount and brand of broth for each person for calories. Broth should be no more than 5 calories per 1/2 cup though.

  16. Totally awesome. A great addition to our food lineup in P2 and beyond. Great flavor and not overpowered by chili powder. My husband loved it also. Thanks for sharing!

  17. HI!! i am starting HCG diet this week. and looking for recipes. Just wondering, how does the chicken broth fit in to the diet? I know that it had almost no calories and all. but it doesnt say anything about it in the diet plan. just wondering if you asked a physician or anything before making recipes with it.

Thanks so much. LOVE the blog
